A luxury restaurant in a restored Henequen hacienda is the Ixi'im seal, recognized as the most beautiful restaurant in the world by UNESCO, who last May 15th awarded the International Prix Versailles Award "thanks to its exquisite integration of Architecture and interior design in a project of excellence. "
The word restaurant comes from the French "restaurant", and this from the Latin "restore", repair, as the food clearly "repairs the empty stomach". It is said that this term was first used in 1765 when a Parisian baker named Boulanger, was famed for selling soup under a sign saying "come to my house, men of tired stomachs, and I will restore you."
In architecture The term restore, comes from the same etymology "restore" and is understood, according to Cesare Brandi, as any intervention directed to return the efficiency to a product of human activity. In general this term has given rise to several debates, however, the underlying idea is to recover that which has been given a value.
It is the case of this proposal that groups in a fortunate way the two concepts and restores to both its diners, the view and the senses through a respectful intervention on a built pre-existence. Its name is Ixi'im word that in Maya means maize, and is the flagship restaurant of the luxury hotel Chablé Resort & Spa, recognized internationally for its beauty and deserving in 2017, the same prize but in the category of "Best hotel in the world".
The complex is located in Chocholá, Yucatán, within an old Hacienda Henequen, whose productive splendor in the second half of the nineteenth century and subsequent decline in the second half of the twentieth century led to the search for new uses to revive this heritage Cultural. In particular Ixi'im is located in the House of machines, since the whole hacendario is constituted by several independent structures that make up the public space or main square.
The proposal, to say of its authors − Paulina Morán, Jorge bolin Architecture, Lavalle/Peniche Architects, Mauricio Gallegos Arquitectos, Central of Projects SCP −, part of establishing a pause in the north-south axis that connects, from its origin, the main hull of the Hacienda with other nearby settlements, through a subtle threshold that virtually contains the space of access to ruin.
The team of architects wanted to refer to the original activity and its industrial elements, and therefore the intervention strategy was materialized in a large metallic enclosure that links the pre-existing with the new architectural program. This steel frame, inside is offset to liberate the existing walls of the structural responsibility, architectural gesture that produces an interstitial space of dialogue between patrimony and intervention and in turn fulfills other functions like filtering light Natural indirect and support the deployment of a showcase that houses the largest collection of artisan drinks in the country.
Another interesting element is the ropes of Henequen suspended inside, which were produced by the last active cordage of Yucatán. The ropes, in addition to fulfilling an acoustic function, have a testimonial function because they are sample of the material that gave rise to the building.
The spatial sequence allows to travel between epochs in a cycle of respect and belonging. This, coupled with the gastronomic paradise it represents, makes the whole experience a real restoration.
